What’s the class about?
Understanding how to identify which knives to use and how to use them properly is essential knowledge for any competent cook.
In this hands on class, you will learn how to joint a whole chicken, fillet fish and cut fruit and vegetables with finesse. You will go on to create a range of dishes using ingredients you prepared from scratch.
You will enjoy some of the fruits of your labour for lunch with a glass or two of wine and take some of what you prepare home. So if you can, do bring a cool bag.
What will you cook?
Because the lesson focuses largely on knife skills, we will focus on preparing various raw ingredients. As such, there are less complete dishes made than in other classes.
We change our recipes seasonally but the type of dishes you may cook are:
- Chicken saltimbocca
- Seabass stuffed with carrots, leek and tarragon
- Orange segments in caramel
What is the format of the class?
You’ll enjoy a hot drink and pastry upon arrival and get to know your fellow classmates.
This class is a ‘cookalong’ format where you intermittently watch demonstrations as each ingredient is prepared or cooked before cooking them yourself. This format ensures you see each skill directly before attempting it.
A glass of wine will be served towards the end of the class (when less skill is required!).
