Course Information
The Hunter’s Feast
24 October and 4 December 3 Hours
Join Jane, The Functional Foodie, for The Hunter’s Feast – a fantastic class of Game cookery at Truro School Cookery.
Game is an important part of rural life, both as vital elements of local food economy, and as an often free source of healthy meat. Using it can feel a little daunting though, especially when the game is not already prepared for cooking, and if you have not cooked with it before. In this session, learn how to remove the breasts and legs from game birds without plucking or gutting, followed by how to cook everything from the delicate breast portions and speedy small bird roasts to the long, slow pheasant or venison stews that create incredibly deep and flavour-packed plates for cold winter evenings!
Example menu:
Rich Venison Stew
Seared Partridge Breast
Pheasant Cooked in Cream and Cider
Roasted Game Birds
Jane will be sourcing the meat for this event from her own land, so the menu will depend on the availability of produce at the time.
