Seasonaires Course – 5-day intensive cookery course

For anyone embarking on a ski season or sailing the seven seas as a yacht chef, a comprehensive grounding in cookery is essential to stand out from the competition. Truro School Cookery is running this intensive 5-day course specifically with this goal in mind. All recipes have been trialled and tested by our team of dedicated chefs as well as our students who have followed the course during term time.

What will you learn to cook?

This is an entirely practical course of study with globally inspired dishes designed to equip you with knowledge and expertise to assist as a cook or chef in a professional chalet or yacht environment. Students learn key skills over the course of the week that can be used in a multitude of other recipes in the future.  You’ll cook delicious breakfast, lunch and dinner recipes as well as inspiring ideas for afternoon teas. In addition, students will be enrolled in an online Food Hygiene course, essential for any food preparation employment.

Recipes over the course vary from quick and simple through to the more complicated with students cooking in pairs, groups and individually at times. Learn how to make Italian classics; pasta from scratch, perfect risotto and decadent tiramisu right through to Asian classics like sushi, Korean fried chicken and hand-made gyozas. You’ll learn how to whip up a perfect savoury or sweet tart with wonderfully crumbly pastry as well as profiteroles and seasonal pavlova.

The course is designed in such a way that students make and eat their own breakfasts, lunches and dinners. Students will sometimes cook alone as well as in pairs.  Students will also learn how to keep their kitchens hygienically clean and tidy so they leave with ship shape organisation skills!

8am-9pm (residential students will be staying on site).


If you choose the course with accommodation, you will be allocated a shared room in one of our boarding houses and you will need to arrive in the afternoon the day before your course begins.
