Join Jane, The Functional Foodie, at Truro School Cookery for The Hunter’s Feast — an immersive evening of wild game cookery celebrating seasonal, locally sourced ingredients and traditional countryside skills.
Game plays an important role in rural life, providing both a sustainable local food source and delicious, nutrient-rich meat. Yet for many home cooks, preparing and cooking game can feel unfamiliar or intimidating. This hands-on class is designed to give you the confidence to work with game from field to plate.
During the session, you will learn how to prepare game birds by removing the breasts and legs without plucking or gutting, alongside practical techniques for cooking a variety of game meats. From quick-roasted small birds and perfectly seared breast portions to rich, slow-cooked pheasant and venison dishes ideal for winter evenings, you’ll discover how to create deeply flavoured seasonal meals with ease.
Jane will be sourcing the game for this event from her own land, so the final menu may vary depending on seasonal availability and the produce at the time.
Jane Hutton, know as The Functional Foodie, is an NHS commissioned, award-winning specialist in nutrition and everyday eating, passionate about helping people stay well in busy lives. She is a clinical nutritionist, nutritional therapist, chef, educator, food and health writer, consultant, author, and speaker.
Growing up cooking home grown produce made culinary medicine, and its evolution into The Functional Food Cookery School, inevitable parts of Jane’s mission to give people the tools to understand their own bodies and feed them, deliciously, and clinically, to resolve and prevent ill health.
She is also a qualified teacher, and makes nutrition and daily eating easy to understand, whether it’s why your hormones are out of whack or you’d like to know a healthy way to make cake!
