As part of this year’s fantastic offering at Truro Food Festival, Truro School Cookery is delighted to collaborate with the festival to bring you two exclusive opportunities to cook alongside renowned guest chefs in our state-of-the-art cookery school in central Truro.

Spend the weekend immersed in all things food, with an exciting line-up of entertainment, demonstrations, artisan stalls and shopping at Lemon Quay, before joining the chefs for an intimate, hands-on masterclass at Truro School Cookery.

With numbers limited to just 20 guests per session, these exclusive experiences offer the chance to learn directly from the chefs through a combination of one-to-one guidance, group tuition and practical cooking, before enjoying the dishes you’ve created together.

Come with a partner, friend, or on your own, and discover the vibrant flavours of India with Nisha Parmar on Saturday and the rich traditions of Māori cuisine with matblak on Sunday.

These exclusive sessions are expected to sell out quickly. Both chefs are travelling to Cornwall especially for Truro Food Festival, making this a rare opportunity to cook alongside them in an intimate setting.

Butter Chicken, Naan & Kachumber with Nisha Parmar

Join MasterChef and author Nisha Parmar in the Truro School Cookery kitchen for a hands-on journey into the flavours of her family kitchen.

Learn to create Nisha’s unique homestyle butter chicken recipe, passed down through generations from her mum. Alongside the curry, you’ll make fresh naan and a vibrant kachumber salad, finishing with a delicious Indian dessert.

Throughout the session, Nisha will share stories from her MasterChef journey, her extensive travels and the Asian-fusion dishes inspired by them, as well as her route from a 17-year banking career to becoming a respected author with her debut cookbook and one of the UK’s most sought-after private chefs.

This intimate masterclass is a chance to cook alongside Nisha, learn her techniques and discover the stories, traditions and family recipes behind the food.

You’ll make:

  • Traditional butter chicken
  • Fresh naan
  • Kachumber salad
  • Indian dessert

Please note that while we always aim to deliver the advertised menu, dishes may occasionally change depending on seasonal produce availability.

Dietary adaptations: Plant-based, gluten-free and dairy-free options can be accommodated. The curry base can also be adapted for fish, prawns, paneer or chickpeas if required. Please email [email protected] to discuss your requirements.

Free parking is available for all masterclass participants, and you’re welcome to leave your car on-site if you’re heading into Truro Food Festival before or afterwards. The cookery school is within walking distance of Lemon Quay.

Please note that the walk into town includes a steep hill, so this route may not be suitable for those with accessibility requirements.

Meet Nisha Parmar

Nisha Parmar first caught the public’s eye on BBC’s MasterChef in 2018, where her bold flavours, stunning presentation and Asian-fusion flair set her apart.

After swapping a 17-year career in banking for the kitchen, Nisha has become one of the UK’s most sought-after private chefs, cooking for celebrities including Joe Wicks, Alesha Dixon and John Terry, while curating high-end dining experiences at prestigious venues ranging from St Paul’s Cathedral to 10 Downing Street.

Her debut cookbook, SHARE: Asian Dinner Party Recipes, was released in 2024 to rave reviews, bringing together dishes inspired by her heritage, travels and signature dinner-party style.

Nisha is also a familiar face at food festivals, a regular on Saturday Kitchen and a passionate advocate for showcasing global flavours. With brand partnerships including Magimix, Big Green Egg and Belazu, alongside an ever-growing portfolio of creative projects, Nisha’s career is rooted in one clear passion: bringing people together over great food.

As well as joining Nisha for this exclusive masterclass, you’ll also have the opportunity to see her in action on the Chef Demo Stage at Lemon Quay during Truro Food Festival. Masterclass guests will receive priority seating for her live demonstration, giving you the best chance to experience her cooking and storytelling in front of a festival audience.
